CORFU. The head chef of the luxury restaurant has sent an extrajudicial document to the trainee who accused him of physical abuse at work.

"...I would remind you of something which you cannot deny - work conditions, especially for trainees, are excellent..."

The above is included in the extrajudicial document sent by the Head Chef at the luxury Corfu restaurant who has been accused of abusive behaviour - verbal and physical - by the 19-yer-old trainee chef.

The accused has called on the trainee to take back "the defamatory accusations against me" otherwise he will take legal action.

The extrajudicial document makes it clear that it is the Head Chef who has been accused and not the kitchen supervisor.

According to what the restaurant owner said on television, the Head Chef is in any case no longer working for the business.

In the document the accused maintains that, apart from the last week, there were never disputes or arguments with the trainee chef and points out that the trainee had changed posts twice in the space of approximately 40 days after complaining about the behaviour of his supervisors...

The accused responded to the accusations of the 19-year-old by referring to swings in the young man's behaviour in the week before he left the restaurant. He said, amongst other things:

"In the last week before you left your behaviour had changed completely - you spoke back to your supervisors, made deliberate mistakes, injured yourself due to clumsiness and burnt your arms with boiling water when you were working mainly with rice and pasta.

You were also less serious about your work and incidents occurred due to the fact that you didn't have the concentration necessary in a professional kitchen.

I would like to remind you that during work you shot videos of various 'sketches' in the kitchen. In general, you gave the impression that, for some reason, you had become tired of working and didn't have the same concentration that you had when you started your training.

This culminated in verbal exchanges due to the aforementioned change in behaviour but never in physical violence."

The accused also pointed out that the 19-year-old had told the owner that he wanted to leave due to exhaustion.
