CORFU. Two-day sushi seminar on 18-19 December with Katerina Hanioti at the School of Tourism in the De Bono Hotel in Gouvia.

The programme is as follows:
  1. Introduction
  2. The main ingredients in making sushi and how they are prepared:
  • Rice (How do we make rice for sushi? Which are the most popular Japanese rices?)
  • Sushi seasoning (What is it and how is it made?)
  • Sushi sauces (How to make a sushi sauce. The chef will demonstrate how to prepare Kabayaki Sauce, Spicy Mayo, Ponzu Sauce and others)
  1. Types of Sushi
Preparing the basic types of sushi – the chef will demonstrate: Special Cajun Maki Roll, Inside out Roll (Uramaki), Special Shrimp Temaki , Gunkan, Nigiri, Temaki
